PEANUT BUTTER SOUP WITH RICE – A SIERRA LEONEAN / WEST AFRICAN DISH
In Sierra Leone peanut butter soup is a delicacy; we eat it with rice, pounded yam or fufu. It’s also known as a Mandingo all time favourite. I’ve read a cook book where they recommend adding sugar but it’s not part of the real recipe. If it’s anything about Africans or African food is the simple fact that we don’t like mixing sweets and salts. We like our salty things salty and our sweets just sweet.
